Wine processing: Classic fermented in steel fermenters with three daily flooding combined with expansion in modern Vinomatics. Here, the temperature is allowed to rise even to 30 ° C. A portion of the juice was separated from the mash, and ended the already fermented in oak barrels. The rest remained on the skins at all ripe tannin extract. The wine matured for 20 months in new American oak, with full malolactic fermentation. The exceptional McLaren Vale Syrah was named after the native place of Oatleys of 1952. The first year of Balmoral in 1989 and 1992 he was given this name and now stands as the flagship wines from Rosemount Estate. At that time he belonged to the group of the Show Reserve wines and in 1992 was the flagship wine of the estate. Already more than 160 years, Shiraz has grown in McLaren Vale, of which there are still delivering a few vines, which have minimal, but very exceptionally concentrated yields.
