Preparation: For Montes Cabernet Sauvignon Kaiken Ultra all carefully hand picked grapes, brought to the winery and this first cold macerated for seven days (10 ° C). Then start the ten-to twelve-day fermentation at controlled temperatures of 25 to 28 ° C. After fermentation, the wines remain closed for another ten to 15 days on the skins to extract intense colors, flavors and soft tannins from the grape skins. The wines are then removed and expanded to 80% for a year in French oak barriques.
