Production: The grapes are mostly read by hand and gently squeezed first cold macerated for 6 to 9 days to withdraw maximum color and flavor. Then the wine is fermented, pressed and placed in barrels where it goes through the following spring a late malolactic fermentation. After a total of 12 month barrel maturation, the blend is collected and filtered light on the bottle.
