Production: The grapes were picked during the hot daylight hours fermented to trigger a rapid fermentation, then ground and 7-8 days. Twice a day the mash with about 80% of the must was flooded, to deprive the grapes maximum color and juicy fruit flavors and so the concentrated nature of the Syrah clearly produce. After a gentle pressing of the wine for 14 months in French and American oak, 20% of newly matured.
