Wine processing: After pleasantly balanced weather conditions and a steady development in the first months of Rebwachstums, accelerated unusual heat in the summer, the ripening of the grapes so much so that the reading in many places in the Columbia Valley on 15 August started. 2005 went to one as the earliest, depending on vintage year recorded in the annals of the wine country. Only in cooler areas, the grapes were left on the vine and thus enjoy again the sharp fall in late summer temperatures, which further extended its maturity. The grapes were able to develop a particularly fragrant bouquet and intense flavors, before they finally mature, with good sugar and alcohol levels as well as a fresh natural acid were introduced. In the cellar all the grapes are destemmed, gently crushed and then started the seven-to ten-day fermentation on the skins. In order to remove the skins while a maximum of color, aromas and soft tannins, the wine is pumped twice a day for the mash. After fermentation is completed the young wine during his roughly twelve-month maturity in barrels of French and American oak. The addition of a small amount of Cabernet Franc, Merlot makes it even softer and gives it its fine-accented berry flavors. The name Two Vines (dt "two branches") is reminiscent of the espalier vines that benefit on the banks of the Columbia River from an optimal solar orientation and thereby unfold their most intense, fruity grape flavors.
