WILLIAMS PEAR
The best Williams Christian pears grow on the altitudes of the Wallis and in the Vintschgau, where they are exposed to large variations in temperature when maturing, so that you can develop unusual spicy and fluffy flavour. After the harvest only select pears are processed by us. With the Einmai handles and the core houses are carefully removed, in order to avoid negative taste notes. The fermentation takes place in high-grade steel tanks. It may not rise too highly, then flavour losses are avoided. Immediately after end of the fermentation the maische must be burned. Here carefully and to a considerable degree the bad alcohols, which are in the pre and wake, must be separated from the heart. The in such a way won high-per cent distillate goes through now the maturing process, whereby it becomes approximately, soft and complex. Now the time came, in order to provide the Cuvée. Williams Christian distillates of pears from the two different cultivation areas are now united.
